Sam’s Famous Jalapeno Cheddar Butter Chicken

* 4 – 8oz Sam’s Famous Jalapeno Cheddar Bar Cheese, to taste
* 1/4c butter
* 1T olive oil
* 2 large Chicken breast, cut into 1″ pieces
* 1 large onion, diced
* 3 cloves garlic, minced
* 1t ginger, finely grated
* 2T garam marsala
* 1/2t ground turmeric
* 1/2t salt
* 3oz tomato paste
* 1 28oz can whole peeled tomatoes
* 1/4c heavy cream
* 1/4c fresh cilantro, chopped

Bake chicken at 350 for 15 minutes, turn and bake for another 10-15 minutes.
In large Dutch oven melt butter with olive oil. Add onions and sauté until onions start to caramelize. Add ginger and garlic, sauté about 2 minutes, do not brown garlic. Add garam marsala, turmeric and salt, cook about 1 minute. Add tomatoes and tomato paste, with potato masher, smash tomatoes.
Simmer about 30 minutes, uncovered, until thickened, stirring often.
Add cooked chicken to sauce, cover and cook about 10 minutes.
Reduce heat to low, add heavy cream and Sam’s Famous Jalapeno Cheddar, stir until melted.
Serve with rice.
Sprinkle cilantro over top.

Sam’s Famous Roasted Jalapeno Pepper Poppers

* 18 – 20 jalapeno or small sweet peppers
* 1/4c Sam’s Famous Jalapeno Cheddar
* 4oz cream cheese
* 1T onion, finely minced
* 1/4c smoked gouda cheese, finely grated
* 1/4c extra sharp cheddar, finely grated
* 4 slices bacon, fried crisp, and crumbled
* 1/4t smoked paprika Cut 1/4 of the peppers off, lengthwise, remove seeds, leave stems attached.
With electric mixer, blend Sam’s Famous Jalapeno Cheddar and cream cheese until smooth, and no chunks of cream cheese remain. With fork mix in remaining ingredients.
Fill peppers with cheese mixture.
Sprinkle with more smoked paprika is desired.

Bake at 350 for 18 – 20 minutes, until cheese starts to turn golden.

Sam’s Famous Easy Cheesy Pimento Dip

* 1 8oz container Sam’s Famous Steakhouse Cheddar
* 1 2oz jar diced pimentos, drained, saving 2t juice
* 1/4c Hellmann’s Mayonnaise
* 1/2t smoked paprika
* 1/4c red onion, finely minced
* 1 – 2 cloves garlic, finely minced
* 1 1/2c sharp cheddar, finely grated

Mix all together and refrigerate overnight.
Serve with bread chips and pretzels

Sam’s Famous ‘Chili’ & Cheddar Dogs & Fries

* 1/2c Sam’s Famous Steakhouse Cheddar
* 1 16oz can Bush’s Country Style Baked Beans
* 2T Brown Sugar
* 1t Worcestershire Sauce
* 1/4c Ketchup
* 1/2c Pale Ale

Mix beans, brown sugar, Worcestershire, ketchup and pale ale together in sauce pan. Simmer over low heat for 30 minutes, stirring occasionally.
Remove pan from heat and add Sam’s Famous Steakhouse Cheddar, mixing until cheese is melted. Mash some of the beans to help thicken sauce.
Serve over hot dogs and French fries.

Makes a great dip as well!

Sam’s Famous Street Corn

* 1/2c Sam’s Famous Steakhouse Cheddar
* 1/2c butter, soften
* 1/3c Parmesan, grated – not powdered
* 2T Hellmann’s mayonnaise
* 2T Mexican crema or sour cream
* 1 clove garlic, minced
* 1t lime zest, finely grated
* 1/2t sea salt, or to taste
* 1/4c cilantro, finely chopped
Mix above ingredients together, refrigerate for at least 4 hours or over night to blend flavors
* 6-8 ears sweet corn
* 1c cilantro, chopped – for serving
* 3-4 limes, quartered
Remove cheese mixture from refrigerator to soften.
Husk sweet corn, remove corn silk. Grill corn over medium-high heat, about 2-3 minutes per side, until kernels begin to look lightly charred. Baste corn with cheese mixture.
Serve immediately with remaining cheese mixture, cilantro and lime wedges.

Sam’s Famous Beer Cheese & Brats Nachos

* 8 oz Sam’s Famous Jalapeno Cheddar
* 1/2 c pale ale
* 1 10 oz Bag Tortilla Chip Dippers
* 1/2 – 1 pound of your favorite brats, sliced about 1/4″ thick
* 1 large onion, quartered and cut into petals
* Several sweet peppers, seeds removed and sliced
* 2 jalapenos, seeds removed and sliced
* 1/2 c black olives, sliced
* 2 medium limes, quartered
* 1/4 c cilantro, chopped

In saucepan, simmer pale ale for about 5 minutes to remove alcohol (if anyone under 21 will be eating nachos). Cool slightly and mix in Sam’s Famous Jalapeno Cheddar, keep warm.
Over medium heat, grill brats and vegetables in a single layer on grill pans. Grill, turning, until brats start to brown and vegetables are lightly charred and tender.
Place tortilla chips on serving plate, in single layer, cup side up. Pour cheese sauce evenly over top. Add brats, peppers and onions. Sprinkle black olives and cilantro over brats and vegetables. Serve with lime wedges and any remaining cheese sauce.

Sam’s Famous Jalapeno Beer Cheese Dip/Sauce

* 1 8oz container Sam’s Famous Jalapeno Cheddar
* 1/3 Pale Ale, or your favorite beer

In small sauce pan, over medium low heat, simmer pale ale for 5 minutes, to cook off alcohol. Remove from heat, cool slightly.
Add Sam’s Famous Jalapeno Cheddar into pale ale, mix until smooth.
Refrigerate overnight to blend flavors. Serve warm or chilled.
Great with pretzels, Or as a sauce on Nachos, French Fries, Sandwiches.
Also works well with Steakhouse Cheddar.

Sam’s Famous Cheese Toast.

Sam’s Famous Steakhouse Cheddar and/or Jalapeno Cheddar
French bread
Butter – soften
Garlic Powder
Fresh Herbs and Vegetables

Slice bread 1/2″ – 3/4″ thick. Spread butter over each slice. Place on broiler rack, sprinkle lightly with garlic powder. Broil until bread starts to turn a light golden color. Remove from broiler. Spread Sam’s Famous Cheese over each slice of bread. Return to broiler and broil until cheese starts to bubble and brown.
Top each slice with fresh herbs and vegetables.

Note: Bread will crisp better if you use a rack instead of pan.
I use a NuWave Oven. Both cheeses work well with fresh herbs and garlic.

Sam’s Famous Bacon Cheddar Cheese Ball

* 8oz Sam’s Famous Bar Cheese, any flavor
* 8oz cream cheese, soften
* 1/2c finely grated sharp cheddar cheese
* 6-8 slices bacon, cooked crisp and crumbled
* 1c chopped toasted pecans or almonds
* 1T chopped parsley
* 2T green onion, thinly sliced

With electric mixer, mix Sam’s Famous Bar Cheese, cream cheese and grated sharp cheddar, until well blended. Add bacon and 1T of the green onion. Mix with fork. Form cheese mixture into a ball, chill in refrigerator while nuts are being toasted.

In large non-stick pan, toast nuts – lightly, do not burn. Cool. Mix nuts, parsley and 1T green onions together. Roll cheese ball in nut mixture. Wrap in plastic wrap. Chill at least 4 hours, or overnight for better flavor.

Sam’s Famous Cheddar Beer Fondue

*1T cornstarch

* 2T butter
* 1c light beer
* 8oz Sam’s Famous Jalapeno Cheddar Bar Cheese

Melt butter in medium sauce pan, add corn starch, cook lightly for 5 minutes, do not let mixture brown.

Slowly add beer, stirring continually. Over medium heat, let sauce thicken, continue stirring. Add Sam’s Famous Jalapeno Cheddar Bar Cheese, stir until melted. If sauce it too thick, add more beer a little at a time. Keep sauce warm in fondue pot.


* 2 pounds chicken wings
* 3/4t Blis Blast Hot Pepper Sauce
* 3T butter, soften
* 4oz Sam’s Famous Jalapeno Cheddar Bar Cheese
* 1 1/2t olive oil
* 1t honey
* 1 small clove garlic, crushed
* season salt

Place chicken wings on foil-lined pan, sprinkle with season salt, bake at 450 °F for 30 minutes, until crispy, turning once.

Mix remaining ingredients together until smooth and creamy. Refrigerate while chicken wings are baking. For more flavor, make Jalapeno Butter the day before.

Spread Jalapeno Butter on wings, as you eat each one.


* 6 eggs, hard boiled
* 1T + 1t Sam’s Famous Jalapeno Cheddar Bar Cheese
* 1 1/2t Hellman mayonnaise
* 1/2t olive oil
* 1/4t apple cider vinegar
* 1/2t sugar
* paprika or parsley – optional

Cut eggs in half. Place yolks in bowl and mash. Mix in remaining ingredients until smooth and creamy. Spoon yolk mixture into egg whites. Sprinkle with paprika or parsley


* 1 – 15.5oz can Chickpeas, drained, saving 1 tablespoon liquid
* 2t fresh lemon juice
* 1 large clove garlic
* 1T olive oil, plus more if needed
* 1/4t – 1/2t ground red pepper
* 1/2t ground cumin
* 4oz – 8oz Sam’s Famous Jalapeno Cheddar Bar Cheese, to taste
* Salt to taste
* 1T Fresh Cilantro or Green Onions, chopped
* Paprika

Place chickpeas, liquid, lemon juice, garlic, olive oil, red pepper and cumin in food processor. Process until smooth, adding more olive oil or water, 1/2 teaspoon at a time, if needed for desired consistency.

Add Sam’s Famous Jalapeno Cheddar Bar Cheese to hummus mixture, process until smooth. Add salt to taste.

Place hummus in serving bowl sprinkle with cilantro or green onions and paprika.


* 4oz Sam’s Famous Jalapeno Cheddar Bar Cheese
* 8 large eggs
* 1/2c milk
* 8oz sliced mushrooms
* 1/2c multi colored mini sweet peppers, diced
* 1/2c onion, diced small
* 1/2c ham, diced
* 1/4t salt
* 1/4t ground pepper
* 1T olive oil
* 1T butter

With electric mixer, mix Sam’s famous Jalapeno Cheddar Bar Cheese, eggs, salt and pepper, until well blended. Add milk, mix.

Saute mushroom in olive oil and butter until lightly browned. Add onions, saute until soft. Add ham and sweet peppers cook 2 minutes.

Butter a 9 to 10″ baking dish. Pour in egg mixture and vegetables, mix lightly.

Bake at 350 for 25 to 35 minutes, or until center of Frittata is set.


* 1 1/2 pounds ground round
* 4T Sam’s Famous Jalapeno Cheddar Bar Cheese
* 4 hamburger buns
* Toppings of your choice

Divide ground round into 8 equal portions. Pat out to 1/4″ thick. Spoon 1 tablespoon of Sam’s Famous Jalapeno Cheddar Bar Cheese onto 4 of the patties. Top with remaining patties, press together to seal edges.

Grill or pan fry about 10 minutes per side, Do Not Press burger, this will make the cheese ooze out.

Serve on hamburger buns with the toppings of your choice.


* 8oz sour cream
* 1 8oz container Sam’s Famous Steakhouse Cheddar
* 2T Vidalia onion, minced
* 1/4t onion powder
* 3T green onion, thinly sliced, include green ends
* 2t dehydrated onions
* 1T fresh parsley, chopped, optional
* dash of garlic powder

Mix all together, reserving 1T sliced green onion, until well blended. Cover and refrigerate for at least 4 hours or overnight.
To serve sprinkle remaining 1T sliced green onion over top of dip.


* 1 Baguette or load of French Bread, sliced 1/2″ thick
* 1/2c butter
* 1/2c olive oil
* 2 cloves garlic, crushed – more for stronger garlic taste
* 1 8oz container Sam’s Famous Steakhouse Cheddar Bar Cheese

Melt butter in olive oil, add crushed garlic. Over very low heat, keep warm for 15 minutes. Stirring occasionally. Do not let mixture bubble. Let stand for 1 hour.

Rewarm butter mixture. Dip one side of each slice of bread into butter mixture. Place on baking rack or parchment lined cookie sheet. Let bread set for 15 minutes.

Bake at 350 for 10-15 minutes, or until lightly golden brown and crisp. Cool on wire rack.

Serve with Sam’s Famous Steakhouse Cheddar Bar Cheese.


* 1 pound lean ground sirloin
* 1/2c onion, minced
* 1 clove garlic, minced
* 2t brown sugar
* 2t sweet pickle relish
* 3/4c ketsup
* 1t yellow mustard
* 1/2c beef stock
* salt and pepper to taste
* 3T – 4T Sam’s Famous Steakhouse Cheddar Bar Cheese
or Sam’s Famous Jalapeno Cheddar Bar Cheese
* 4 hamburger buns
* 1 medium tomato, sliced
* lettuce

Brown ground sirloin and onion. Add garlic and brown sugar, cook 3 minutes.

Stir in relish, ketchup, mustard and beef stock. Simmer 20 – 30 minutes, until slightly thickened. Season with salt and pepper. Add Sam’s Famous Bar Cheese, stir until melted and well blended.

Serve immediately on hamburger buns with tomato slices and lettuce.

Makes 4 servings

* 2T olive oil
* 1 small onion, minced
* 2 cloves garlic, minced
* 1T cornstarch
* 1 1/2c milk
* 8oz shredded sharp cheddar cheese
* 1 8oz container of Sam’s Famous Jalapeno Cheddar Bar Cheese
* 1 large tomato, chopped
* 1/4c fresh cilantro, chopped
* 1 jalapeno chopped, if desired for extra heat
Chop tomato, place on several layers of paper towel, to absorb excess liquid, at least 30 minutes.
In large skillet, saute onion in olive oil until soften. Add garlic, saute about 1 minute longer. Stir in cornstarch to form a roux. Cook about 2 minutes.
Slowly add milk, to roux, whisk well until smooth and mixture starts to thicken. Add shredded cheddar, stir until melted and smooth. Add Sam’s Famous Jalapeno Cheddar Bar Cheese, stir until melted and smooth.
Stir in chopped tomatoes and chopped jalapeno (if using). Pour queso into a mini crockpot or fondue dish, to keep warm. Sprinkle top of dip with cilantro.
Serve with tortilla chips.

Sam’s Famous Nacho Fries

* 1 – 32oz package French Fries, Waffle Fries or Potato Wedges
* 1 pound lean ground sirloin
* 1 package hot taco mix
* 1c sour cream + extra for serving
* 1 8oz container Sam’s Famous Jalapeno Cheddar Bar Cheese – soften
* 1 – 2T milk
* 1c salsa + extra for serving
* 1/2c red onion, chopped
* 1 green pepper, chopped
* 1c tomato, chopped
* 1/2c frozen or canned sweet corn
* 6 green onions, sliced
* 1 can black olives, sliced
* 2 jalapeno, thinly sliced
* 1c fresh cilantro, chopped
* 1 lime

Cook potatoes according to package directions. Cook ground sirloin and taco mix, according to package directions.

Mix 1c sour cream and Sam’s Famous Jalapeno Cheddar Bar Cheese with hand mixer until creamy. Add milk to make mixture pourable.

Place potatoes in 2 large cast iron pans or large cookie sheet. Spread taco mixture over potatoes. Pour salsa over taco meat. Pour cheese mixture over salsa. Sprinkle vegetables over cheese mixture. Bake in 350 oven for 20 minutes.

Sprinkle cilantro over nachos. Squeeze lime juice over nachos, serve immediately. Serve with extra sour cream and salsa. Makes 8 – 12 servings

* 1 pound (or more) thinly sliced lean corned beef
* 8 slices hearty marble rye bread
* 3T softened butter
* 2T mayonnaise
* 3T + extra for spreading on bread, your choice of
Sam’s Famous Steakhouse Cheddar Bar Cheese or
Sam’s Famous Jalapeno Cheddar Bar Cheese – or – both if you are feeling adventurous!
* 1c German sauerkraut, drained well
Parchment paper
Spread softened butter on one side of each slice of bread. Spread Sam’s Famous Bar Cheese on the other side of each slice of bread.
Mix 3T Sam’s Famous Bar Cheese with 2T of mayonnaise, add sauerkraut, mix well.
Heat large fry pan over medium heat. Place 2 slices of bread, butter side down, in pan. Add 1/4 of corned beef to each slice of bread, top with 1/4 of the sauerkraut mixture. Place slice of bread, butter side up, on sauerkraut mixture. Cook until bread is browned and crisp, turn sandwich over and continue to cook until this side of bread is browned and crisp. Repeat with remaining ingredients for the other two sandwiches.
Transfer grilled sandwiches to parchment lined cookie sheet. Place cookie sheet with sandwiches into a preheated 350 oven for 10 minutes or until sandwiches are heated through.
Serve immediately. Makes 4 sandwiches

* 6 c cooked pasta of your choice
* 2T butter
* 2T cornstarch
* 3 c milk
* 1 c shredded Cheddar Cheese
* 4oz to 8 oz Sam’s Famous Jalapeno Cheddar Bar Cheese,
to taste
* salt to taste
* paprika if desired
Melt butter in saucepan, add cornstarch to create a roux. Cook 1 -2 minutes, stirring, do not let roux brown.  Add milk slowly, stirring continuously. Simmer, stirring until thicken. Cook 5 minutes, stirring until smooth.
Add shredded Cheddar Cheese, stir until melted. Add Sam’s Famous Jalapeno Cheddar Bar Cheese, stir until smooth. Add salt to taste. Pour sauce over pasta, mix well. Pour into baking dish. Sprinkle with paprika if desired. Bake at 350 for 30 minutes.
Makes 4-6 servings

* 2 large boneless/skinless chicken breast halves – cooked and shredded
* 2T olive oil
* 1 large onion, chopped
* 3 cloves garlic, minced
* 1t ground cumin, or to taste
* 2t dried cilantro, or to taste
* 1t dried oregano, or to taste
* salt to taste
* 1 32oz container chicken broth
* 1 or 2 cans great northern beans, drained
* 1/2c sour cream
* 4oz to 8oz Sam’s Famous Jalapeno Cheddar Bar Cheese, to taste
Heat olive oil in dutch oven, add onion, saute until lightly golden. Add garlic and spices, saute about 3 minutes, do not brown garlic.
Add shredded chicken, stock and beans, simmer about 20 minutes. Add sour cream and Sam’s Famous Jalapeno Cheddar Bar Cheese, stir until melted. Add salt to taste.
Serve with corn bread. About 4-6 servings.
